Pizza at Home - Stuffed Crust Pizza

It's Sunday and it's pizza day! We've done so many up to this point. My sister-in-law suggested that we need to do Stuffed Crust Pizza. We haven't done that yet! Let's tackle it!

The crust for the stuffed crust pizza is not any different than a regular crust pizza. The pizza crust I chose is from SallysBakingAddiction.com for Homemade Pizza Crust for Beginners.

After the first rise, this is what it looks like. In my past few weeks I've found that it's important to have that second rise. I split this into two bowls and let it rise again.

After that second rise, I prepped the surface with corn meal. Just about time to assemble.

So many sites I looked up suggested using string cheese sticks for their stuffed crust. I think I can make my own though. I grabbed a bowl full of shredded mozzarella and started squishing pieces together. Once I had a few, I put them in the fridge to set up.

I made my dough extra large because I'm going to be losing a bit of that size to rolling up the cheese sticks.

A work in progress. It took about 7.5 sticks to get through the whole pizza.

Success! It's important to get everything sealed. Hopefully nothing leaks out in the cooking.

For this pizza, I've topped it with pepperoni, sausage, mozzarella, and parmesan cheeses.

And because I'm feeding 6 people, I always have to make a second pizza. I'm trying to make everyone happy with this one, so I'm topping it with pepperoni, pineapple, mozzarella, goat cheese, and parmesan.

We seem to be missing a side dish. Theresa noticed that the tomatoes on her tomato plants are really starting to turn red. She's going to make a salad.
Her favorite tomatoes ever are Flavor Bombs Cherry Tomatoes. She finds them at Sam's Club, but they're a bit expensive. These aren't your normal Cherry Tomatoes. The seeds aren't typically for sale, but there's one grower in Michigan, gardenhoard.com, who received them as part of a seed swap.
Theresa bought a package earlier in the season. She was a little surprised that it only had 12 seeds inside! She and her dad planted them and they've been tending them all season.

And somehow in that 1 package of 12 seeds, 3 of the plants were a different tomato variety. They kept growing and growing. They're monsters!

The kids have loved having these snacks handy whenever they're outside playing. They'll get permission then grab a few red tomatoes and pop them like candy.

That's enough for a salad.

  1. That stuffed crust is a dish of its own! Like the "fullness" of that stuffed crust...gives the pizza a heartier look, especially with those different toppings. Those homegrown tomatoes look really inviting (along with the fresh salad)...can't beat homegrown tomatoes (a former co-worker once brought some homegrown cherry tomatoes to work for us to try...they were soooooooooo sweet...puts the supermarket ones to shame!) Looks like another pizza favorite to add to the growing list! EOM

    1. It really is! All the crusts are little breadstick treats after the pizza is finished.
      We've been pulling so many tomatoes off lately it's ridiculous. It's nice to have a little treat to snack on in the front yard whenever you want. Between that and the mint leaves, the kids have a few things they can eat in the front yard.
