Happy National Doughnut Day! Making Krispy Kreme Doughnuts has been in my queue for a little while now. Today is the perfect day to do it!
Today I'm going to be attempting to make those pillowy sugar dough balls that melt in your mouth. For my recipe, I'm using a
highly reviewed recipe from africanbites.com. It's got the typical things you'd expect, and also a 1/3rd cup of shortening in the dough.
We're using the paddle attachment for this recipe, where we're usually choosing the dough hook.
This super sticky dough needs to dough in size. That'll give me and the kids some time to do something else.
This wasn't on any of the recipes I've seen, but thought it would probably be a good idea. These doughnuts need to rise, and any handling is going to cause it to deflate. I enlisted the help of the kids to cut out some squares of parchment paper.
The dough has risen and now it's time to roll out the dough and cut out the doughnuts.
The dough is still really sticky so we dusted the counter and the dough. Both kids helped roll it flat.
And then we're using cookie cutters to cut out our donut shapes. First a large one for the outer diameter, then a smaller one for the inner diameter. We experimented with different sizes for each.

After cutting out all the shapes, they need to rise for a few minutes and double in size again. Each one is on their own piece of parchment.
To go along with our donuts, Theresa wanted to make a lemon filling. Good thing we've got fresh lemons!
Using lemon juice, butter, eggs, and sugar, her filling is coming together.
Krispy Kreme donuts have that sugary glaze that covers the donuts, so I have to have that. Just a little powdered sugar, evaporated milk, melted butter, and vanilla.
My frying oil is up to 375F and my doughnuts have doubled in size. It's time to fry!
Having these on individual parchment pieces made it easy to transfer them into the hot oil.
They spend 90 seconds like this.
And then they get flipped over and spend another 90 seconds like this. Yum!
I dunked each of the hot doughnuts in the icing then put them on a rack to cool.
Wait a minute, I've got a hat that I've been saving for this! Now I can look the part.
Theresa couldn't resist the "Hot Doughnuts Now" and had to try one.
Mmm.
And since it's near Halloween, the kids and I are going to decorate a few.
A little bit of Halloween sugar and sprinkles and these are ready to go.

They look shiny just like Krispy Kreme Doughnuts.
Any time I try to take pictures of something, these kids will scrunch down and try to get into the picture. We made a couple Mickey shaped donuts, including a few with holes cut out of them. I think they turned out really good!
I made the mistake of arranging these incorrectly. They made me fix them and line them up so they matched. Orange halloween icing for Ian. Pink icing for Alli.
Theresa's favorite donuts are the ones covered in sugar crystals, not the sugar glaze, so I made a few more of those too.
The kids are loving the donuts they made.

My plate this morning. Coffee and a couple donuts.
Biting into it, it's nice and fluffy. Not exactly the "melt in your mouth" that Krispy Kreme donuts are. And definitely a different flavor than Krispy Kreme donuts. These are still tasty, but I can see how small variations can make a difference in the end product.
Theresa appreciated that they were not greasy.
What's the verdict kids? They both loved helping out and eating the donuts they made.

Looks soooooooooooo good and irresistible....got that shiny glaze down pat! When you said "lemon filling", I was thinking, yum, yum...that'll be an extra good one :-) Perfect Krispy Kreme hat for the occasion. What good paper cutter helpers...they were very focused on their important task. What a mug cup to use for Halloween...great choice! That was definitely a fun and delicious "at home" episode. EOM
