Quite the detailed analysis of the GSCB Cookie Sandwich (too long to write out and say the cookie's full name! :-) ) before attempting the copycat version, and an accurate one, too...the proof was in the final product. The cookie looks soooooooooooooooooooo good (advantage of homemade version is you can be more generous with the buttercream filling and caramel drizzle!) and was a humongous success. What prep work for the taste test by preparing all the ingredients beforehand, and then heading to EPCOT w/ the ingredients in a cooler just to assemble it on the spot---all for an immediate comparison with a freshly purchased GSCB Cookie Sandwich. Great job on creating a delicious copycat version of the cookie. EOM
